Onions aside, I’ve never met a condiment I don’t like. Slaw, guacamole, tomatoes, sautéed mushrooms - all delicious. In Germany I had a wild boar burger with cranberry jam that made me lose my marbles.

They do make the whole burger better -- like a rug that ties the room together. Probably why I'm still fond of the basic McDonald's hamburger/cheeseburger; like a haiku, an idea stripped to its bare essence.

Good quality meat hand chopped fresh with minimal seasoning. Cooked medium. Shouldn't need toppings just like a good steak. Burgers Priest here in Toronto used to be like this. A little mustard and fried onion for effect.

lettuce, tomato, raw red onions are the basics. don't NEED cheese, but it's welcomed. besides that, anything that can add spice, ie. jalapeños or other types of peppers, mayo-based sauce mixed with chipotle or sriracha, etc. i'm not much of a sauce person, in general, so condiments like ketchup or mustard aren't a necessity for me. if there's relish around, i may throw some on though.

hmm don't know how to quantify, but i like the spicy, pungency of raw red onions. don't care for cooked onions, red or any other variety (on my burger, that is)
