I've been subsisting primarily on Cadbury mini eggs. I had to have a salad for lunch yesterday to balance out the mini eggs.

One pan meals. I've been roasting mixed vegetables and starches in the oven and alternating proteins to keep things interesting. As an example, last night I roasted a medley of yellow potatoes, sweet onions and fennel in avocado oil along side a wild salmon filet. I topped it off with a big helping of kimchi. Earlier meals in the day are smaller; like an apple with old cheddar and a few almonds or kefir with berries and pumpkin seeds.

For me, I'm trying to maintain a routine from before sheltering in place. The only real change is that the home-baked goods have increased and I've started making homemade pasta again. We have to meal plan a little more but we have so many carryout options right in our neighborhood. And Trader Joe's Joe Joes because they rule.

I’ve been making ice cream, and then, because of stress eating, we wipe it out instantly. We’ve also been trying to use our cast iron skillet for chicken kabobs!

Bread, kale, and baked goods. I have two roommates to help me eat what I bake, but it still feels like there's been so much stuff. My brother and his fiancee live in my neighborhood so I also share with them, but usually they just give me something they baked in return (but this is a good problem to have).

was on a Starburst jelly bean kick for a few weeks, but that's per usual around this time of year when Easter candy brings out all of the flavor packs. as far as staying in and cooking a little more often than usual, we've been doing one pot dishes, alternating between a chicken & rice recipe (which we modify each time with what we have on hand), dan dan noodles, and some type of curry dish. and we've been consuming a lot of brown rice. oh, also, going through my girlfriend's stash of frozen packs of pork roll during the weekends.
