When I have eggs over easy with bacon side at Sporty's Tavern Vashon Island, I put half the bacon in a folded slice of buttered limp white toast in a napkin in my purse to eat later on the trail or on the road. The best. But otherwise, mayonnaise, etc. Is a pile of bacon called a rasher? Why? Everyone on this island eats breakfast at the tavern. The staff has the unusual concept of filling the coffee from the glass pot while they take the order, and quickly return with the eggs etc HOT. Niceties in upscale eateries slow the delivery process and all cools down so eggs bacon, and 2 slices of bread lose that sheen of grease sparking with heat and salt.
Growing up in Arkansas, we just had bacon and tomato sandwiches. So toasted white bread, although nowadays I want sourdough. Then mayo (Miracle Whip if I'm back home), bacon, tomatoes with some salt, and the top piece of toast. If I'm really feeling fancy, I can throw some avocado on there.
